Whipped Cottage Cheese Parfaits

Silky whipped cottage cheese parfaits topped with Amarena cherries, granola, and sliced almonds for a high protein breakfast or healthy snack.

Ingredients

  • 2 cups whipped cottage cheese* chilled
  • 1 cup sour cherries in syrup I use Amarena cherries
  • 1/2 cup granola homemade recipe here
  • 2 Tbsp sliced almonds

Instructions

  1. Put a layer of chilled whipped cottage cheese in each glass.
  2. Top with cherries, adding a bit of the juice as well. Then sprinkle them with granola and sliced almonds.
  3. Repeat the layer and top your parfaits with an extra cherry or two.
  4. Enjoy right away.

Notes

  • *How to whip cottage cheese
  • Place cottage cheese in your blender or food processor. Blend until smooth and creamy, scraping down the sides of the machine once or twice. Note: a high speed blender will make the silkiest texture.
  • Taste and add a touch of honey or a drop of almond or vanilla extract if you like.
  • You can use your whipped cottage cheese right away, or chill it for several hours to thicken it up.
  • I like to pack it into a large jar and use throughout the week. It will last up 5 -7 days in the fridge.
