Ingredients

- 1 lb feta cheese block style; not crumbles
- 5 ounces yogurt for a richer dip you can use sour cream, Skyr or Greek yogurt (this is about 1/2 cup
- 1-2 Tbsp lemon juice fresh squeezed
- 1 Tbsp extra virgin olive oil
- 1 clove garlic peeled and smashed

Instructions
- Add the feta cheese to a food processor or blender, breaking it up into chunks as you add. it. Add the skyr, lemon juice, olive oil and garlic as well.
- Blend or process until completely smooth. Taste to adjust any of the ingredients to your preference.
- Spoon the whipped feta dip out onto a serving bowl or plate. At this point you can cover and chill if you would like a firmer texture.
- When ready to serve, take the back of a large spoon to create swoops or swirls in the surface of the dip. Drizzle generously with the olive oil and top with pistachios, olives, dill, and fresh cracked black pepper.
- Serve with crackers, toasted bread, or pita bread.
