Description
This dip combines softened cream cheese and crumbly feta cheese whipped together with drained roasted red bell peppers, minced garlic, and cracked black pepper. The mixture is processed until mostly smooth but remains textured, then transferred to a bowl where fresh chopped dill is folded in to infuse an herbal freshness.
The flavors balance the tangy salty feta with the mild sweetness of the roasted peppers and a warm garlic punch. The creamy and slightly chunky texture makes it easy to scoop with vegetables such as carrots, celery, snap peas, or bell pepper strips, providing a colorful and flavorful appetizer or snack.
This dip can be prepared ahead and refrigerated for a couple hours to meld flavors and firm up. Variations can include sun-dried tomatoes with basil, a splash of lemon juice to brighten flavors, or red pepper flakes for heat. Substituting Greek yogurt is possible but may require extra feta and salt to compensate for the milder base.
Ingredients
- 8 ounces cream cheese softened
- 3 ounces feta cheese crumbled
- 1 cup red bell pepper I use the ones packed in water or roast my own), drained, roasted
- 1 clove garlic minced, about a tsp
- 1/2 teaspoon black pepper cracked
- 2 tablespoons dill chopped, fresh
- Veggie dippers carrots, sugar snap peas, celery, pepper strips, broccoli, cherry tomatoes
Instructions
- Place the cream cheese, feta, roasted red peppers, garlic and black pepper in a food processor and blend until smooth, but still chunky.
- Pour/spoon mixture into a large bowl, and fold in the fresh dill.
- Transfer dip to a serving bowl, cover and refrigerate for an hour or two.
- Serve with veggie dippers.
- Devour.
Notes
- Store dip up to 5 days in an airtight container in the refrigerator for best freshness.
- Brighten flavor with a squeeze of lemon juice just before serving if desired.
- Incorporate sun-dried tomatoes and basil as an alternative flavor profile.
