Ingredients
- 1 1/2 ounces bourbon I like to use a slightly overproof bourbon in this
- 3/4 ounce plum syrup
- 3/4 ounce lemon juice fresh
- 1/4 ounce ginger fresh juice
- 1 egg white
- plum sliced, fresh
- candied ginger
Instructions
- Shake all ingredients together without ice, in order to emulsify the egg white.
- Add ice to the shaking tin and shake again to chill the drink. Strain over a large ice cube in a rocks glass. Garnish with candied ginger and plum.
Notes
- Use about 1/4 ounce of fresh ginger juice per drink for balanced spice.
- Fresh ginger juice can be extracted by grating ginger over a strainer and pressing with a spatula to collect juice.
- Store-bought ginger juice is a convenient alternative if fresh ginger is not available.
