  • 1 1/2 ounces bourbon I like to use a slightly overproof bourbon in this
  • 3/4 ounce plum syrup
  • 3/4 ounce lemon juice fresh
  • 1/4 ounce ginger fresh juice
  • 1 egg white
  • plum sliced, fresh
  • candied ginger

Instructions

  1. Shake all ingredients together without ice, in order to emulsify the egg white.
  2. Add ice to the shaking tin and shake again to chill the drink. Strain over a large ice cube in a rocks glass. Garnish with candied ginger and plum.

Notes

  • Use about 1/4 ounce of fresh ginger juice per drink for balanced spice.
  • Fresh ginger juice can be extracted by grating ginger over a strainer and pressing with a spatula to collect juice.
  • Store-bought ginger juice is a convenient alternative if fresh ginger is not available.
