This White Bean, Artichoke and Tomato Salad is dressed in a simple lemon vinaigrette and full of fresh herbs.

Ingredients
- 15 ounce cannellini beans drained and rinsed, canned
- 14 ounces artichoke hearts drained and chopped, canned in water
- 1 cup cherry tomatoes halved
- 1 tablespoon sun-dried tomatoes chopped
- 1/4 cup flat leaf parsley chopped
- 1 tablespoon basil chopped, fresh
- 3 tablespoons lemon juice fresh
- 1 tablespoon olive oil
- kosher salt fresh ground, to taste
- black pepper fresh ground, to taste
Instructions
- In a large bowl whisk together the lemon juice, olive oil, salt and pepper. Add in the remaining ingredients and stir together until coated in the dressing. Taste for seasoning. Serve immediately or cover and refrigerate until ready to serve.
