White Bean Pumpkin Chili
Description
The White Bean Pumpkin Chili recipe starts by browning lean ground beef with diced onions in a large pot and draining excess fat. Pumpkin puree, diced tomatoes, white kidney beans, chili powder, cumin, onion salt, cinnamon, salt, and pepper are stirred in. The pot simmers until the beans soften and the flavors combine smoothly.
To enhance the texture, a small amount of the chili is pureed using a hand blender at the end of cooking to thicken the stew-like consistency. The pumpkin adds a gentle sweetness and creaminess that balances the savory spices and meat. The use of cinnamon lends a warm spice note uncommon in traditional chili but complementary here.

Ingredients
- 1.5 pounds ground beef lean
- 1 white onion large diced
- 14 ounces pumpkin puree pure
- 14 diced tomatoes brand or style 'ox' unclear
- 19 ounces white kidney beans
- 2 tablespoons chili powder or to taste I use around 2 1/2
- 1 1/2 teaspoons cumin
- 2 teaspoons onion salt
- 1-2 teaspoons cinnamon
- salt extra, to taste
- black pepper extra, to taste
Instructions
- Fry ground beef and onions in the bottom of a large stock pot until the ground beef is brown and the onions are soft. Drain grease.
- Mix in the pumpkin, tomatoes, beans and spices.
- Simmer in the pot until the beans soften slightly. The longer you simmer, the more time the spices have to meld together.
- At the very end, use your hand blender to puree a small amount in the pot, (maybe a cup) this thickens the chili and makes it amazing!!!
- Serve and enjoy.
Notes
- You can substitute ground turkey for ground beef to make a leaner version of the chili.
