White Cheddar Mashed Potatoes
Description
This mashed potato recipe starts by boiling diced Yukon Gold potatoes until fork tender. Once drained, the potatoes are mashed or passed through a ricer for a smooth texture. The mashed potatoes are enriched with heavy cream, butter, and shredded white cheddar cheese, which melts into the warm potatoes to impart a creamy consistency and gentle cheddar flavor. Seasoning with kosher salt and freshly cracked black pepper balances the richness.
The dish has a velvety texture with a sharp undertone from the white cheddar, complemented by the fresh, mild bite of chopped chives stirred in at the end. This makes a comforting yet flavorful side perfect for holiday meals or everyday dinners.
Chopped chives are best added just before serving to retain freshness. These mashed potatoes can be prepared ahead by skipping the chives, then reheated gently with a little stock or cream before adding chives.
Ingredients
- 3 pounds potato Yukon gold variety
- ½ cup heavy cream plus more if needed, or whole milk
- 3 tablespoons butter unsalted
- ½ pound White Cheddar Cheese shredded
- salt Kosher salt and freshly cracked, to taste
- black pepper Kosher salt and freshly cracked, to taste
- chives freshly chopped
Instructions
- Peel and dice potatoes, making sure all are in about 1 inch cubes.
- Place in a large pot and cover with water. Bring to a boil over medium-high heat and then reduce heat to medium low to maintain a rolling boil. Cook until potatoes are fork tender and you can easily pierce them with a fork when touched
- Remove the potatoes from the heat and drain off the water. Place the diced potatoes through a ricer and then place back into the warm pot. Alternatively, if you don't have a ricer, mash the potatoes with a masher and place back into the warm pot
- Add the cream, butter, cheddar and stir to incorporate. Season with salt and pepper and fold in the chopped chives before serving. Add more heavy cream or chicken stock to thin out / make smooth as needed.
Notes
- Make mashed potatoes ahead by omitting chives, then reheat gently with cream or stock before serving and stir in fresh chives.
