White Chicken Chili with Hominy

This White Chicken Chili with Hominy is a comforting, hearty dish without any hassle! One of the easiest meals you will ever make, this chili uses mainly pantry items to create a flavorful, satisfying dish that's ready in 20 minutes.

Ingredients

  • 2 .5 oz chicken breast canned, drained
  • 2 oz White beans canned, cannellini or Great Northern, drained and rinsed
  • 2 oz white hominy canned, 24 oz can, drained and rinsed
  • 1-2 green chile roasted Hatch, Pueblo, or Anaheim, peeled and diced; can substitute 2 7oz cans of green chiles
  • 4 cups chicken broth low sodium
  • ½ onion white, diced
  • 2 garlic diced cloves
  • ¼ teaspoon cumin ground
  • salt to taste
  • black pepper to taste

Optional Toppings

  • sour cream
  • cilantro diced
  • white cheese shredded, like muenster, Monterey Jack, Chihuahua, or Oaxaca
  • lime juice
  • tortilla chips crumbled, lime flavored optional
  • jalapeño sliced, pickled, juice for additional spice

Instructions

  1. Gather and prepare all of the canned products.
  2. Heat two tablespoons of olive oil in a Dutch oven or large pot over medium heat. Add the diced onion and garlic and sauté until soft and fragrant.
  3. Add the drained canned chicken and use the back of the spoon to break up any big pieces.
  4. Add the drained and rinsed beans and hominy.
  5. Add the green chiles and chicken broth.
  6. Add the cumin and season with salt and pepper.
  7. Stir everything together and bring to a boil. Lower the heat and simmer for 10 minutes to allow all of the flavors to come together. Add more salt and pepper as needed.
  8. Serve with any of the garnishes listed.

Notes

  • Replace the canned chicken with 4 cups of rotisserie chicken or your own leftover cooked chicken.
  • For more spice, add additional chopped green chiles than what's indicated. However, if you like less spice, add less chiles or remove the seeds and veins.
