White Chocolate and Macadamia Nut Subway Style Cookies

White Chocolate and Macadamia Nut Subway Style Cookies combine buttery cookie dough with chopped macadamia nuts and white chocolate chips. The resulting cookies bake to a soft, lightly golden texture, with chunks of nuts and melting sweet white chocolate in every bite.

Description

This cookie recipe begins by creaming softened butter with light brown and granulated sugars to create a fluffy base. Vanilla extract and egg add flavor and structure, followed by a gentle incorporation of all-purpose flour, salt, and baking soda to avoid overmixing. Chopped macadamia nuts provide a crunchy nutty texture, while white chocolate chips offer sweetness and creamy pockets throughout the dough. The dough is shaped into golf ball-sized balls and spaced apart on baking sheets before baking at 350ºF until light golden and still soft inside.

The blend of white chocolate’s creamy sweetness and the rich, buttery macadamia nuts is a hallmark of Subway-style cookies, delivering a rich texture with a tender crumb. Flattening the cookies slightly after baking ensures even softness and helps achieve their distinctive look.

They are well-suited as a snack or dessert that pairs easily with coffee or milk. Baking times should be watched carefully to maintain softness without overbaking.
