White Chocolate Christmas Blondies
Description
This recipe starts with a blondie batter combining melted unsalted butter, light brown sugar, vanilla extract, and a large egg, mixed with all-purpose flour and a pinch of salt. White chocolate chips are folded into the batter, which is baked in a lined 8x8-inch pan until set but still moist in the center.
Once cooled, the blondies are topped with a smooth cream cheese frosting made from softened cream cheese, unsalted butter, confectioners' sugar, vanilla extract, and salt. The frosting is then decorated with red and green holiday sprinkles to create a festive appearance. The blondies have a soft crumb with pockets of melted white chocolate and a tangy-sweet frosting layer.
This buttery dessert balances sweet and creamy textures, making it a flavorful treat for Christmas or winter occasions. Bars keep well at room temperature in an airtight container for several days, maintaining frosting softness without refrigeration, though refrigeration is an option for preference.
Ingredients
Blondies
- ½ cup butter 1 stick, melted, unsalted
- 1 egg large
- 1 cup light brown sugar packed
- 1 tablespoon vanilla extract
- 1 cup all-purpose flour
- ½ teaspoon salt or to taste
- 1 cup white chocolate chips
Frosting
- 6 ounces cream cheese softened (lite okay)
- ¼ cup butter unsalted, softened
- 1 ½ cups confectioners’ sugar
- ½ teaspoon vanilla extract
- ½ teaspoon salt or to taste
- white chocolate chips about 1/2 (amount unspecified
- red sprinkles about 3 to 4 tablespoons, also called holiday sprinkles
- green sprinkles about 3 to 4 tablespoons, also called holiday sprinkles
Instructions
Blondies:
- Preheat oven to 350F. Line an 8-by-8-inch baking pan with aluminum foil, spray with cooking spray; set aside.
- To a large, microwave-safe bowl add the butter and heat to melt, about 1 minute on high power.
- Wait momentarily before adding the egg so you don’t scramble it. Add the egg, brown sugar, vanilla, and whisk until smooth.
- Add the flour, salt, and stir until just combined, don’t overmix.
- Add the white chocolate chips and stir to combine.
- Turn batter out into prepared pan, smoothing the top lightly with a spatula as necessary. Bake for about 20 to 22 minutes, or until top is set in center and done; don’t overbake. Blondies firm up as they cool. A toothpick should come out clean, or with a few moist crumbs, but no batter.
- Place pan on a wire rack to cool completely before frosting.
Frosting:
- Use store bought frosting OR to a large bowl, add the cream cheese, butter, and beat with a handheld electric mixer until smooth.
- Add the confectioners’ sugar, vanilla, salt, and beat to incorporate and until frosting is smooth.
- Spread frosting evenly over bars.
- Evenly sprinkle the white chocolate chips and sprinkles before slicing and serving.
Notes
- You may substitute store-bought whipped cream cheese frosting for the homemade frosting if desired.
- Store blondies in an airtight container at room temperature for up to 5 days.
- Keeping frosted bars at room temperature maintains frosting texture, but refrigeration is possible if preferred.
