White Chocolate Raspberry Mini Tarts

White Chocolate Raspberry Mini Tarts feature golden homemade tart shells filled with a creamy white chocolate and cream cheese mixture, topped fresh with raspberries and white chocolate shavings. The buttery crust provides a tender base, while the whipped cream folded into the filling adds lightness that balances the sweet white chocolate and the tartness of the raspberries.

Description

This recipe starts by crafting tart shells from a dough of butter, sugar, eggs, vanilla, flour, and baking powder. The batter is portioned into a mini tart pan and baked until golden brown. The filling combines softened cream cheese with melted white chocolate for richness. Separately whipped heavy cream with powdered sugar is folded in to lighten the mixture, creating a smooth, fluffy texture for the filling. Once shells are cooled, they are filled with this white chocolate cream cheese mixture. Fresh raspberries crown the tarts, complemented by shavings of white chocolate for texture and extra sweetness. This combination results in a delicate tart with a balance of creamy, sweet, and slightly tart flavors from the fruit. The mini size is convenient for dessert parties or as elegant treats.

Ingredients

Servings

Tarts

  • 1 1/4 cups butter softened, unsalted
  • 1 cup granulated sugar
  • 2 egg room temperature
  • 2 tsp vanilla
  • 3 cups all-purpose flour
  • 1 tsp baking powder

White Chocolate Filling

  • 16 oz cream cheese softened at room temperature
  • 11 oz white chocolate melted
  • 1 cup heavy whipping cream cold
  • 1/4 cup powdered sugar

To Garnish

  • 2 pints raspberries fresh
  • white chocolate shavings

Instructions

Tarts

  1. Preheat the oven to 350°F. Using an electric stand or hand mixer, cream the softened butter and sugar for about 3 minutes or until it's light and fluffy.
  2. One at a time, beat the eggs into the mixture, followed by the vanilla extract. In a separate bowl, whisk the flour and baking powder together and add it into the batter. Beat to combine.
  3. Distribute about 2 tablespoons of the batter into each mold of a tart shell pan. Bake the tarts for 15 minutes, or until they turn golden brown. Let them cool for 10 minutes. Remove the shells and set them aside.

White Chocolate Filling

  1. Using a double boiler or microwave, melt the white chocolate. Using a mixer, whisk the cream cheese until smooth. Next, pour the melted white chocolate into the cream cheese and mix to combine.
  2. In another bowl, whip the heavy whipping cream with the powdered sugar until stiff peaks form. You can use a mixer or whisk it by hand.
  3. Gently fold the whipped cream into the cream cheese and white chocolate mixture. The final product should have a thick consistency that is very fluffy and tender.

To Assemble

  1. Using a pastry bag, pipe the white chocolate filling into the center of the tarts. Garnish the top of the tarts with raspberries and white chocolate shavings. Serve and enjoy!
