White wine garlic prawns

White Wine Garlic Prawns feature peeled prawns cooked in butter with garlic, chardonnay, and lemon juice, finished with fresh parsley. The method produces prawns that are golden, opaque, and infused with a delicate wine and citrus sauce. This dish offers a refined but approachable seafood preparation highlighting simple, quality ingredients with complementary bright and rich flavors.

Description

This recipe starts by melting butter in a frying pan and adding peeled prawns in a single layer to allow even cooking and caramelization. The prawns cook until golden brown and opaque, signaling doneness. Then crushed garlic is quickly cooked to release aroma without burning. Chardonnay white wine and lemon juice add acidity and a subtle fruitiness, blending with the butter to form a light sauce. Fresh parsley adds a herbaceous note and an appealing color contrast.

The cooking process is brief and at moderate heat to maintain tender prawns and a balanced sauce. The prawns can be served immediately to retain their texture and juiciness. The lemon slices as garnish provide optional additional brightness.

Served as an appetizer or part of a seafood meal, these prawns pair well with crusty bread to soak up the sauce or alongside simple salads. This dish emphasizes fresh shrimp flavor enhanced by wine and garlic without heavy seasoning.

Ingredients

Servings
  • 1 kg prawns deveined and peeled, or shrimp
  • 2 tbsp butter
  • 4 garlic crushed, cloves
  • 1/3 cup chardonnay brand: Fat Bastard
  • 1 tbsp parsley finely chopped
  • 1-2 tbsp lemon juice

Instructions

  1. Peel and de-vein your prawns if they aren't already, leaving the tail on.
  2. Melt the butter in a large frying pan then add the prawns in a single layer (this might mean cooking them in batches, depending on the size of your pan).
  3. Cook the prawns until golden brown and opaque on both sides then add the garlic.
  4. Allow the garlic to cook for 20 seconds then pour in the wine, lemon juice, parsley and season with salt and pepper.
  5. Allow the wine to reduce for a minute or two then serve.
