Whole Lemon Dressing

Whole Lemon Dressing is a creamy, tangy vinaigrette made by blending an entire cleaned lemon with olive oil, salt, and sugar until smooth. The use of the entire lemon, minus the ends and seeds, creates a slightly bitter, juicy dressing with a thick texture and bright citrus flavor. It’s an easy dressing that can enhance salads or be used as a sauce.

Description

This Whole Lemon Dressing blends an organic lemon cut into quarters (with ends and seeds removed) with extra virgin olive oil, salt, and sugar. The blending process breaks down the lemon peel and pulp, creating a thick, emulsified dressing featuring the bitterness of the rind balanced by olive oil’s richness and the sweetness of sugar. Salt enhances the flavors.

The resulting dressing is smooth and dense, with a strong lemon aroma and flavor, capturing the lemon’s full profile beyond just juice. It provides a bright, zesty taste with a hint of bitterness from the rind that some dressings lack.

This dressing pairs well with green salads, roasted vegetables, or grilled fish, adding a lively citrus punch. It can be stored in an airtight jar at room temperature for same-day use or refrigerated for longer storage; however, olive oil may solidify in the fridge, so letting it sit at room temperature before use is recommended.

Ingredients

Servings
  • 1 lemon organic
  • 1 cup extra virgin olive oil
  • 1/2 tsp salt
  • 1/2 tsp sugar

Instructions

  1. Wash your lemon. Slice off both ends and discard. (Trimming off the ends reduces excess peel.) Cut the lemon in quarters and pick out any seeds. Add the lemon quarters to your blender.
  2. Add the oil, salt, and sugar to the blender and blend, starting on low speed, working up to high speed, until the dressing is thick and smooth and there are no chunks of lemon rind left. Give the dressing a taste to see if you need to adjust the salt or sugar.
  3. Pour into an airtight jar. Keep the jar at room temperature if you plan to use it the same day, but otherwise store in the refrigerator. You will need to let the dressing sit on the counter after chilling because the olive oil will start to solidify when refrigerated.
  4. Plan to use your dressing within a week. It can be frozen for longer storage.
