Whole Roasted Cauliflower Recipe
Description
The recipe starts by trimming leaves and the stalk from a whole cauliflower head before coating it with a blend of melted butter, olive oil, garlic, Italian seasoning, salt, and black pepper. Roasting covered at 400°F gently cooks the cauliflower through in 30 minutes, keeping it moist. Uncovering it for an additional 10 to 20 minutes allows the surface to brown slightly and deepen in flavor.
After roasting, the cauliflower is brushed with reserved herb butter mixture and sprinkled with Parmesan cheese before finishing under a high broil to create a golden, slightly crisp crust. Freshly chopped parsley adds a bright finish and fresh aroma. The dish offers a combination of tender vegetable texture with a savory, herby, and cheesy exterior.
This preparation serves well as a vegetarian main or side dish and can be made ahead or stored refrigerated for several days. Reheating can be done in the oven or air fryer to revive texture.
Ingredients
- 1 cauliflower leaves removed, head
- 2 Tbsp. butter melted, or dairy-free butter alternative*
- 2 Tbsp. olive oil
- ½ tsp. salt to taste
- ¼ tsp. black pepper to taste
- 1 tsp. Italian seasoning
- 2 cloves garlic crushed
- 2-3 Tbsp. Parmesan Cheese dairy-free if needed**
- parsley fresh, finely chopped
Instructions
- Preheat oven to 400°F.
- Cut and remove the leaves from the head of cauliflower. Cut and remove the thick white stalk at the base of the head of cauliflower.
- In a small bowl whisk together the butter, oil, salt, pepper, seasonings, and crushed garlic.
- Place cauliflower head in a dutch oven or in a baking dish. Using a basting brush, coat it with ¾ of the butter and herb sauce. Reserve the remaining sauce.
- Cover cauliflower head with aluminum foil and cook in preheated oven for 30 minutes. Remove foil and cook for an additional 10-20 minutes.
- Brush remaining sauce over the cauliflower and sprinkle with Parmesan cheese. Turn the oven to a high broil and broil for 3-5 minutes or until cheese begins to turn a golden brown.
- Serve with fresh parsley and additional Parmesan cheese. Enjoy!
Notes
- You can wash and cut the cauliflower several days before cooking and refrigerate it.
- Store leftovers in airtight containers in the refrigerator for 3-5 days.
- Freeze cooked cauliflower wrapped well for up to 3 months.
