Ingredients

  • 2 ¼ cups whole wheat pastry flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon ground cloves
  • ½ teaspoon grated nutmeg
  • ¾ teaspoon salt
  • 1 egg
  • ½ cup plain nonfat Greek yogurt
  • ¾ cup 1% low fat milk
  • cup pure maple syrup
  • 3 tablespoons molasses
  • 2 tablespoons coconut oil melted & slightly cooled

The Glaze:

  • 2 tablespoons pure maple syrup
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground ginger

Instructions

  1. Preheat the oven to 350 degrees F. Lightly coat a 9- by 5-inch loaf pan with cooking spray.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, cloves, nutmeg and salt.
  3. In a medium bowl, whisk the egg. Add the yogurt, milk, maple syrup, molasses and coconut oil, and stir to combine.
  4. Add the yogurt mixture to the flour mixture and stir to combine.
  5. Transfer the mixture to the prepared loaf pan.
  6. Bake until a toothpick inserted in the center comes out clean, 25 to 30 minutes. Check after 20 minutes. If the top of the bread is becoming to brown, cover with foil.
  7. Let the bread cool in the pan for 5 minutes. Remove and transfer to a rack.
  8. Brush the glaze on top of the bread. Let cool. Cut into ½-inch thick slices. Serve.

The Glaze:

  1. In a small bowl, stir together the maple syrup, cinnamon and ginger.
