Ingredients

  • 1 1/2 cups whole-wheat flour
  • 3 1/2 teaspoons baking powder
  • 2 pinches salt
  • 1 1/2 tablespoons sugar
  • 1 1/2 cups milk
  • 2 egg large
  • 2 tablespoons butter plus extra for cooking, melted
  • maple syrup for serving
  • Preferred toppings such as fresh fruit, whipped cream, or powdered sugar

Instructions

  1. In a large bowl, whisk together the whole-wheat flour, baking powder, salt, and sugar.
  2. In a separate bowl, whisk together the milk, eggs, and melted butter.
  3. Mix wet and dry ingredients until combined; batter may be lumpy.
  4. Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter.
  5. Scoop 1/4 cup batter onto the skillet for each pancake. Cook until bubbles form and edges look dry, about 2 minutes. Flip and cook until golden brown, about 1-2 minutes.
  6. Serve pancakes warm with maple syrup and other preferred toppings.
