Whole30 BBQ Chicken Casserole
Description
This casserole starts with peeled and cubed sweet potatoes boiled until tender, then mashed with ghee. Chicken breast or thigh pieces are cooked in a skillet with olive oil, salt, and pepper until done, then shredded. The shredded chicken is mixed with crumbled cooked bacon and half the barbecue sauce.
The casserole dish is layered with mashed sweet potatoes as the base, topped with the chicken-bacon mixture, and finished with the remaining barbecue sauce spread on top. Baking at 350°F for about 25 minutes allows the flavors to combine and the top to develop a golden tint.
Once out of the oven, the casserole is garnished with chopped red onion and optional cilantro, adding fresh crunch and brightness. This dish offers a mix of creamy, savory, smoky, and sweet flavors and can serve as a hearty main course.
Ingredients
- 3 sweet potato
- 2 tbsp ghee or coconut oil, or butter
- 2 pounds chicken breast or thigh
- 1 1/2 tbsp olive oil
- pinch salt sea salt
- 1/2 tsp black pepper ground
- 1 1/2 cups barbecue sauce Whole30 compliant
- 4 pieces Bacon cooked and crumbled
- 1/2 red onion chopped
- cilantro optional garnish
Instructions
- First, preheat oven to 350 degrees Fahrenheit.
- Next, peel and chop sweet potatoes into 1 inch cubes. Add sweet potatoes to a large pot of water. Boil for 20 to 25 minutes or until fork tender.
- Remove sweet potatoes from pot and drain completely.
- Then, add sweet potatoes and ghee to a mixing bowl. Mash together.
- Cube chicken into 1 inch pieces. Add chicken and olive oil to a skillet over medium heat. Sprinkle with sea salt and pepper. Cook 2 to 3 minutes per side or until cooked through. Then, remove from heat.
- Next, shred chicken with two forks. In a bowl, combine chicken, crumbled bacon, and 1/2 cup of the BBQ sauce. Stir to combine.
- Then, spread mashed sweet potatoes along the bottom of a casserole dish. Top with chicken mixture. Spread remaining BBQ sauce on top.
- Bake for 25 minutes or until top is starting to turn golden.
- Finally, remove from oven. Top with red onion and cilantro if desired.
