Whole30 Meatloaf
Description
Ground beef and pork form the base of this meatloaf, bound by eggs and almond flour instead of traditional breadcrumbs, aligning with Whole30 guidelines. The preparation includes cooking onions and garlic in olive oil to soften and develop flavor before mixing them into the meat combined with garlic powder, onion powder, salt, black pepper, ketchup, and mustard for seasoning.
Baked in a parchment-lined loaf pan at 375°F, it cooks initially for 30 minutes, then topped with ketchup to add moisture and tang before a final 30-minute bake, ensuring the meatloaf reaches a safe internal temperature of 160°F. Cooling slightly before slicing helps maintain shape and juiciness.
This meatloaf fits well into Whole30 meal plans or as a protein-focused main dish suitable for various meal occasions. Leftovers should be stored in the refrigerator and consumed within three days. Beef-only substitutions are possible if preferred.
Ingredients
- 1 pound ground beef
- 1 pound ground pork
- 2 egg
- 1/3 cup almond flour
- 2 tbsp olive oil or ghee
- 1/2 cup white onion chopped finely
- 2 tbsp garlic minced
- 1/4 tsp black pepper ground
- 1/4 tsp salt sea salt
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 2 tbsp ketchup
- 1 tbsp mustard
- 1/2 cup ketchup for garnish
Instructions
- First, preheat oven to 375 degrees Fahrenheit and line a meatloaf or bread pan with parchment paper.
- In a cast iron skillet over medium heat, add olive oil. Then, add chopped onion and minced garlic and cook for 3 to 4 minutes. Remove from heat.
- In a mixing bowl, combine remaining ingredients (except 1/2 cup ketchup for garnish). Add in onions and garlic and mix with hands until combined.
- Transfer meat to loaf pan and bake for 30 minutes.
- After 30 minutes, remove from oven and spread 1/2 cup ketchup on top.
- Bake an additional 30 minutes until meat is cooked through, at least 160 degrees Fahrenheit in the middle.
- Finally, remove from oven and cool for 5 minutes before slicing and serving.
Notes
- You can use 2 pounds of ground beef instead of beef and pork combined if desired.
- Cook meatloaf until it reaches an internal temperature of 160°F for safe consumption.
- Let the meatloaf cool for 5 minutes before slicing to hold its shape.
- Store leftovers in an airtight container refrigerated up to 3 days.
