Whole30 Taco Zucchini Boats are hollowed zucchini filled with a ground beef mixture seasoned with taco spices, onion, and chopped zucchini insides, cooked with salsa and beef stock, then baked until browned. This dish offers a savory, low-carb way to enjoy taco flavors stuffed into vegetable vessels.

Description

Whole30 Taco Zucchini Boats use medium zucchinis halved and hollowed. The scooped-out insides are chopped and cooked together with ground beef and minced yellow onion in a skillet. Seasoned with kosher salt and taco seasoning, this filling cooks until beef browns and vegetables soften.

Salsa and beef stock are added to integrate moisture and flavor, cooking further until the mixture thickens. The filling is then spooned into the prepared zucchini halves. Baking at 375°F for 30-35 minutes browns the tops and cooks the zucchini through.

This recipe can be served as a Whole30-compliant main dish. Optional toppings like lettuce, tomatoes, or non-Whole30 additions such as cheese and crushed tortilla chips can be added after baking. It's also suitable for advance preparation by stuffing ahead and baking later.

  • 8 zucchini medium-sized
  • 1 ¼ lb. ground beef 90/10 lean to fat ratio
  • ½ yellow onion minced (about 2 cups, large
  • 1 teaspoon kosher salt
  • 1 ½ teaspoons taco seasoning
  • ½ cup salsa Whole30-compliant
  • ½ cup beef stock low-sodium, if possible

Instructions

  1. Cut the zucchinis in half, length-wise, and using a spoon, scoop out the middles. Place the zucchinis on a baking sheet for later.
  2. Chop the insides of the zucchinis, then set aside. (These will go into the taco filling!)
  3. In a skillet over medium-high heat, add the ground beef, chopped onion and the insides of the zucchini.
  4. Season the beef and onion with the salt and taco seasoning. Using a wooden spoon, continually move the ingredients around the pan, breaking up and cooking them. (This should take around 15-20 minutes.)
  5. When the ground beef has browned, add the salsa and the beef stock.
  6. Cook for an addition 5-10 minutes, or until those ingredients have soaked into the filling.
  7. Remove the skillet from the heat.
  8. Preheat the oven to 375°F.
  9. Using a spoon, carefully scoop the filling into the hollowed out zucchini.
  10. Once the zucchini are filled, transfer to the preheated oven and bake for 30-35 minutes, or until the tops of the zucchini boats have browned.
  11. Remove from the oven, and enjoy warm!

Notes

  • Prepare and stuff zucchinis in advance, covering and refrigerating until ready to bake for convenience.
  • The filling can be made ahead of time and refrigerated separately before stuffing and baking.
  • Optional toppings include fresh lettuce and tomatoes; non-Whole30 additions like crushed tortilla chips and shredded cheese can be added if not adhering to Whole30.
