Wild Cranberry Sauce

Wild Cranberry Sauce combines tart cranberries with sweet maple syrup, citrus zest, and warming apple pie spices, simmered until the berries burst and the mixture thickens. Chilled before serving, it offers a balanced sweet and tangy condiment with a rich, spiced aroma suitable as a complement to savory dishes.

Description

This sauce is made by simmering cranberries with fresh orange pieces and zest to introduce citrus brightness. Maple syrup adds natural sweetness, while a blend of spices—clove, cinnamon, nutmeg, and ginger—infuses the sauce with seasonal warmth and complexity.

As the cranberries cook, they burst, releasing pectin that helps thicken the sauce naturally. Once cooled, the sauce becomes thicker and more gelatinous, ideal for spreading or spooning alongside meats and holiday dishes.

Wild Cranberry Sauce is typically served chilled or at room temperature. It enhances poultry and pork dishes by cutting through their richness with its tart and spiced profile, making it a practical and flavorful addition to festive meals.

Ingredients

Servings
  • orange cut into large pieces and pith removed, zest of 1
  • 4 cups cranberries
  • 1 cup maple syrup
  • 1/4 cup water
  • 1 teaspoon apple pie spice or 1/4 teaspoon each of clove, cinnamon, nutmeg and ginger

Instructions

  1. Combine all the ingredients in a heavy pot and turn the heat to medium. Bring everything to a boil, then simmer gently until all the cranberries have burst and the liquid has reduced somewhat, about 20 minutes. Remove the orange zest and chill the sauce. It should thicken dramatically once it's cold. Serve chilled or at room temperature.
