This tasty salad has a fantastic combination of sweet and savory flavors, and is easy to throw together on a weeknight.

Ingredients

Servings

The Salad:

  • 1 cup wild rice blend
  • water follow package instructions
  • 6 ounces chicken breasts shredded, cooked, skinless
  • 2 cups kale stems removed, chopped
  • ½ cup dried tart cherries
  • 2 ounces soft goat cheese crumbled

The Dressing:

  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon garlic powder
  • ½ teaspoon rosemary crushed, dried
  • 3 tablespoons extra-virgin olive oil

Instructions

The Salad:

  1. Cook the wild rice blend according to package directions. Fluff with a fork. Transfer the rice to a large bowl to cool.
  2. Add the chicken, kale, dried cherries and goat cherries, and stir gently to combine.
  3. Pour in the dressing and toss to coat. Serve.

The Dressing:

  1. In a small bowl, whisk together the balsamic vinegar, Dijon mustard, garlic powder and rosemary.
  2. While whisking, slowly pour in the olive oil. Whisk until combined.
