Wild Rice Vegetable Pilaf

Ingredients

  • 1 cup wild rice rinsed
  • 3 cups vegetable stock
  • 1 cup carrot grated
  • ½ bell pepper orange, or yellow. You choose, red, finely diced
  • ½ red onion finely diced
  • 2 celery finely diced
  • 1 apple skin on, finely diced
  • 6 radish thinly grated
  • ½ cup flat leaf parsley coarsely chopped
  • ½ teaspoon salt
  • black pepper freshly ground, to taste
  • dressing
  • 1 lemon medium, juiced
  • 3 tablespoons olive oil
  • teaspoon of sea salt
  • black pepper fresh ground, to taste

Instructions

  1. In a medium sauce pan bring the vegetable stock to a boil. Add the rice, stir, and cover. Reduce the heat to simmer and cook for 55 minutes or until the broth has evaporated. Leave covered and set aside.
  2. While the rice is cooking prep the vegetables and apple.
  3. Make the dressing. Add the ingredients to a bowl of jar with a lid and whisk or shake to blend.
  4. In a large bowl combine the rice, vegetables, and dressing and toss to coat.
