Winger’s Wings with Freakin’ Amazing Sauce Copycat
Description
The wings are first dredged evenly in a blend of flour, cayenne pepper, and salt, then chilled to help the coating adhere. Fried in hot oil until golden and crisp, they develop a textured crust. Separately, the sauce combines Franks hot sauce, brown sugar, and water heated until the sugar dissolves and cooled to allow thickening.
Once the wings are drained, they're tossed with the cooled sauce to maintain a tacky, well-coated surface that clings without making the batter soggy. This yields wings that are fiery, sweet, and sticky with a balanced heat and sugar contrast. They are commonly served with ranch dressing and vegetable sticks like celery or carrots.
For best results, the sauce should be fully cooled before coating the wings, which can improve adhesion and thickness. The sauce can also be prepared ahead and stored chilled to save time.
Ingredients
For the Wings
- 1 cup flour (I like to use Wondra flour but regular flour is great too)
- 1/2 teaspoon cayenne pepper
- pinch salt
- 20 chicken wings
- cooking oil for deep frying
Wingers Freakin' Amazing Sauce
- 1/3 cup hot sauce It has to be Franks Hot Sauce, no other sauce will taste as good, brand: Franks
- 1 1/2 cups brown sugar
- 1 tablespoon water
Instructions
For the Wings
- Mix the flour, cayenne and salt together in a bowl.
- Place chicken wings in a large bowl and toss with flour mixture until they are evenly coated (or you can do it the Shake n' Bake way and put it all in a large and coat 5 or so wings at a time so they get evenly covered). Cover bowl and refrigerate for about an hour.
- Make Wingers Freakin Amazing Sauce (below)
- Heat oil in a deep fryer to 375 degrees. Fry coated wings in hot oil for 10 to 15 minutes, or until parts of wings begin to turn brown.
- Remove from heat, place wings in serving bowl, add sauce mixture and stir together.
- Serve with a side of ranch and celery sticks or carrot sticks.
Wingers Freakin Amazing Sauce
- Heat up hot sauce, brown sugar, and water in a saucepan until all the sugar dissolves. Remove sauce from heat and allow it to cool to room temperature before adding to wings OR prepare ahead of time and refrigerate.
- The wings turn out best if you don't pour warm sauce over them. You want it nice and thick.
Notes
- Allow the sauce to fully cool before pouring it over the hot wings for better coating and texture.
- The sauce can be made in advance and refrigerated until ready to use.
- Serve wings with ranch dressing and celery or carrot sticks as traditional accompaniments.
