Ingredients
- 1 green cabbage thinly sliced, medium head
- 4 cups curly kale thinly sliced, or tuscan kale
- 2 pear cut into matchsticks
- 1 red onion thinly sliced, large shallot or half red onion
- ¾ cup carrot shredded
- ½ cup pomegranate arils
- ⅓ cup Pepitas roasted
- ⅓ cup walnuts chopped, toasted, or pecans
- salt kosher salt
- black pepper kosher salt
citrus vinaigrette
- 2 tablespoons orange juice freshly squeezed
- 1 tablespoon red wine vinegar
- 1 teaspoon orange zest freshly grated
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
- 1 garlic finely minced or pressed, clove
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup extra virgin olive oil
Instructions
- In a large bowl, combine the cabbage, kale, pears, carrots and pomegranate. Sprinkle with a pinch of salt and pepper and toss well. Add in the pepitas and nuts. Drizzle with a few tablespoons of the dressing and toss. Let the slaw sit for 5 to 10 minutes before serving.
- You can assemble the ingredients ahead of time, just want to dress until a few minutes before serving.
