Winter Slaw

Winter Slaw is a crunchy salad combining thinly sliced green cabbage, curly kale, matchstick-cut pears, red onion, shredded carrot, and pomegranate arils. Roasted pepitas and toasted walnuts add texture and nuttiness. A citrus vinaigrette with orange juice and zest, red wine vinegar, honey, Dijon mustard, and garlic ties the ingredients together with a bright and tangy dressing.

Description

This Winter Slaw recipe layers thinly sliced green cabbage and kale with sweet pear matchsticks, sharp red onion, and shredded carrots for varied textures and flavors. The addition of pomegranate arils introduces bursts of sweetness and color. Crunchy roasted pepitas and toasted walnuts (or pecans) add a savory contrast. The salad is lightly seasoned with kosher salt and black pepper.

The accompanying citrus vinaigrette is made by whisking fresh orange juice, red wine vinegar, orange zest, honey, Dijon mustard, minced garlic, salt, and black pepper, then emulsifying with extra virgin olive oil. Tossed just before serving, the dressing brightens the vegetables and fruit, balancing sweetness and acidity.

This slaw can be prepared ahead by slicing and mixing the solids, then dressed shortly before serving to preserve texture. The vinaigrette can be refrigerated for up to a week, making this salad convenient for winter meals that benefit from fresh, tangy sides.
