Winter Vegetable Curry

Ingredients

  • 2 tablespoons vegetable oil
  • 2 onion yellow, diced
  • cup red curry paste
  • 1 butternut squash about 5 cups, cubed
  • 2 parsnip chopped
  • 6 carrot chopped medium
  • 2 cups sweet peppers mini, sliced
  • salt to taste
  • 2 (13.5-ounce) coconut milk lite, unsweetened, canned
  • 3 cups white rice cooked

Optional Garnishes

  • grape tomatoes sliced
  • cilantro fresh, chopped
  • sweet peppers sliced
  • red pepper flakes

Instructions

  1. In a large dutch oven over medium high heat, heat 2 tablespoons vegetable oil. Add 2 diced yellow onions and cook until fragrant and translucent, about 5 minutes.
  2. Stir in ⅓ cup red curry paste, 1 cubed butternut squash, 2 chopped parsnips, 6 chopped medium carrots, 2 cups sliced mini sweet peppers and stir to combine. Season with salt to taste. Cook until you can start to smell all the flavors, about 4-5 minutes.
  3. Stir in 2 (13.5-ounce) cans lite unsweetened coconut milk and bring to a boil. Once boiling, reduce to a simmer and heat, uncovered for 30 minutes. Taste again and add more salt if desired.
  4. Serve over 3 cups cooked white rice and top with sliced grape tomatoes, fresh chopped cilantro , and sliced sweet peppers and red pepper flakes to taste.
