World's Best Steak Marinade

This steak marinade combines soy sauce, lemon juice, olive oil, Worcestershire sauce, garlic, Italian seasoning, and spices to impart savory, tangy, and aromatic notes to ribeye or New York steaks. Marinating for a couple of hours allows flavors to penetrate the meat. Cooking the steak on high heat sears the outside, locking in juices, then finishing at medium-high cooks the steak to preferred doneness. Butter and fresh parsley finish the steak with richness and freshness.

Description

The World's Best Steak Marinade features a balanced mix of acidic lemon juice, salty soy sauce, savory Worcestershire, and olive oil enriched with garlic and Italian herbs. This marinade tenderizes the steak while enhancing its natural flavors with layers of complexity. Marinating times range from two hours to overnight for deeper flavor.

Cooking instructions call for searing the steak in a hot skillet, creating a browned exterior crust, which adds texture and flavor through the Maillard reaction. After this initial sear, the steak is cooked at a reduced temperature to the desired doneness. Adding butter at the end contributes moistness and richness, while chopped parsley adds a bright herb note.

This method works well with thicker cuts like rib eye or New York strip, producing a juicy, well-seasoned steak suitable for dinner or grilling season. Allow the steak to rest briefly after cooking to retain juices before serving.

Ingredients

Servings
  • 1/3 cup soy sauce
  • 1/3 cup lemon juice
  • 1/2 cup olive oil
  • 1/4 cup Worcestershire sauce
  • 1 Tablespoon garlic minced
  • 2 Tablespoons Italian seasoning
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • pinch red pepper
  • 1 1/2 pound steaks I used rib eye, New York is also great
  • 2 tablespoons butter
  • parsley fresh chopped

Instructions

  1. In a small bowl, whisk together soy sauce, lemon juice, olive oil, Worcestershire sauce, minced garlic, Italian seasoning, pepper, salt, and a pinch of red pepper.
  2. Add steaks to a resealable zip lock bag or large bowl and pour the marinade on top. Marinate for 2 hours or overnight.

To make the steaks in a skillet:

  1. Turn the skillet to high heat. Add the steaks. Cook on each side for 3 minutes or until outside is browned. Reduce heat to medium-high. Cook the steaks to the desired doneness. Mine took about 10 minutes flipping 3 times to get a medium well.
  2. Top with butter and garnish with fresh parsley if desired.

Notes

  • Marinate the steak for at least 2 hours or overnight to deepen flavor.
  • Use rib eye or New York strip cuts for best results with this marinade.
  • After searing the steak on high heat, finish cooking on medium-high for even doneness.
  • Adding butter at the end enriches the steak's flavor and texture.
  • Garnish with fresh parsley for a fresh, herbal contrast.
