Yaki Onigiri 焼きおにぎり

Yaki Onigiri are grilled Japanese rice balls shaped into triangles or other forms, coated with miso or soy sauce flavors before grilling to develop a crispy, savory crust. The rice is cooked and shaped warm, then brushed with flavorful sauces and grilled until the exterior crisps while remaining soft inside, garnished with chives and sesame seeds or everything bagel seasoning.

Description

This Yaki Onigiri recipe starts with short grain rice cooked traditionally, then shaped into firm triangles using cling wrap while the rice is still warm to maintain cohesion during grilling. Two sauce variations are used: a miso-based glaze mixed with mirin, sake, and sugar, and a soy sauce-based glaze combined with vegetable oil and seasoned with everything bagel seasoning. Butter is used during grilling to add richness and help form a golden crust.

The onigiri are grilled in a cast iron skillet, brushed with their respective sauces, and flipped to ensure even crisping on each side. The miso version requires careful attention to avoid burning due to sugar content. The final texture contrasts the crispy, flavorful outside with the tender, chewy rice inside. Garnishes like chives, sesame seeds, and everything bagel seasoning add brightness and texture.

The rice shaping tips emphasize shaping while warm for better hold and applying firm pressure to prevent falling apart. The grilling process transforms simple steamed rice balls into a savory snack or side dish with rich umami flavors from miso or soy sauce glazes.

Using a rice cooker simplifies preparation, but stovetop cooking is also feasible following appropriate methods. Butter added during grilling enhances flavor and aids browning, while the garnishes provide visual appeal and a fresh finish.

  • Shape the rice warm for better cohesion; shaping cooled rice is more difficult and may result in falling apart during grilling.
  • Apply firm pressure when shaping rice balls to hold them together during grilling.
  • Be careful when grilling miso-coated onigiri to avoid burning due to sugar in the miso sauce.
  • Butter added during grilling helps create a crispy, golden crust and improves flavor.
  • Use garnishes like chives, sesame seeds, or everything bagel seasoning to add texture and visual appeal.
