Description

This recipe begins by marinating thinly sliced pork fillet with sake, soy sauce, and grated ginger for 10 minutes to enhance tenderness and flavor. Meanwhile, vegetables are cut into bite-size pieces for quick stir-frying. The sauce is prepared by mixing soy sauce, sugar, oyster sauce, sake, and finely chopped garlic and ginger.

The udon noodles are briefly cooked in boiling water and drained thoroughly. In a hot pan, sesame oil is heated, and aromatic garlic and ginger are briefly fried before adding the pork to cook through until its color changes. Vegetables are then stir-fried briefly to retain some crunch. The cooked udon noodles are combined with the pork and vegetables, then the sauce is poured over and everything is tossed well to coat evenly.

  • 2 frozen udon noodles or 440g
  • 200 g pork fillet thinly sliced
  • 1 tsp sake
  • 1 tsp soy sauce
  • 1 tsp ginger grated
  • 150 g cabbage
  • 1/4 carrot
  • 1/2 onion or 60g, large
  • 1/4 green bell pepper or 80g
  • 1 tbs sesame oil
  • 1 tbs soy sauce
  • 1 tbs sugar
  • 1 tbs oyster sauce
  • 1 tbs sake
  • 1 clove garlic finely chopped
  • 5 g ginger finely chopped
  • 1 tbs sesame oil
  • bonito flakes for garnish
  • red pickled ginger for garnish

Instructions

  1. Slice the pork fillet thinly and place in a mixing bowl.
  2. Add sake, soy sauce and ginger into the mixing bowl to marinate the pork for 10 minutes.
  3. Cut all the vegetables into bite size pieces and set aside.
  4. Mix all the sauce ingredients (soy sauce, sugar, oyster sauce, sake, mashed garlic, and grated ginger) in a small bowl and set aside.
  5. Cook the udon noodles in boiling water for a couple minutes and drain the cooking water well.
  6. Heat sesame oil in a large frying pan over high heat and add finely chopped garlic and ginger till it aroma.
  7. Add the pork fillet and cook till it's colour changed to grayish colour.
  8. Add the vegetables and stir fry for a couple minutes.
  9. Add the udon noodle and toss all together.
  10. Pour over the sauce mixture and mix them together well.
  11. Serve on a plate and top with bonito flakes and red pickled ginger.

Notes

  • Pork can be substituted with beef or chicken as preferred.
  • Vegetable choices can be adjusted to suit availability or taste.
