Yang Chun Noodle Soup (Yang Chun Mian)

Yang Chun Noodle Soup is a simple yet flavorful broth-based noodle dish featuring thin noodles served in a light chicken broth seasoned with pork lard, soy sauces, sugar, and scallions. The clear broth delivers a gentle savory taste while the lard adds subtle richness. This comforting soup is easy to prepare and highlights basic ingredients in a balanced, warm bowl.

Description

Yang Chun Noodle Soup centers on thin noodles cooked according to package instructions and served in a seasoned chicken broth. The broth is gently simmered with pork lard for fat and flavor, while light and dark soy sauces provide a mild saltiness and depth of color. A pinch of sugar balances the savory elements.

Once the noodles are cooked and drained, they are placed into a bowl and combined with the hot broth mixture, which slightly cooks the noodles further. Finally, chopped scallions and salt to taste are added to complete the dish with a fresh, oniony note and appropriate seasoning.

This soup is intended to be served immediately to maintain the noodles' texture and the broth's warmth. The ingredients keep the flavor delicate enough for a light meal or starter, showcasing simple seasonings alongside a clear broth foundation enhanced by pork lard.
