Yankee Pot Roast

Yankee Pot Roast is a classic slow-cooked beef dish using chuck roast simmered in beef broth with herbs and vegetables until tender, served with a homemade gravy thickened from pan juices. The method produces richly flavored, fork-tender meat and softened carrots and onions.

Description

In this Yankee Pot Roast recipe, a 4-pound chuck roast is browned to develop flavor, then cooked covered in beef broth for over two hours to become tender. Salt, pepper, crushed rosemary, carrots sliced lengthwise, and small peeled onions are added partway through cooking, allowing the vegetables to soften and absorb the braising flavors. The long, gentle simmer breaks down connective tissues, resulting in a moist, flavorful roast.

After cooking, the meat and vegetables are transferred to a serving platter, and the pan juices are transformed into a rich gravy by slowly stirring in a mixture of flour and water until thickened, then seasoned further as needed. This gravy complements the roast and vegetables well.

This dish is fitting for a comforting main meal, often served alongside mashed potatoes or other hearty sides. It highlights traditional American pot roast preparations for robust flavor and tenderness. The included vegetables add natural sweetness and texture contrast within the braise.
