Yellow Squash Casserole

Yellow Squash Casserole combines steamed yellow squash with sautéed onions and garlic, blended with milk, eggs, cheddar cheese, and butter. A crushed Ritz cracker topping mixed with cheese and butter adds a golden, slightly crisp finish after baking. The casserole offers a creamy, tender interior with a crunchy topping.

Description

In this casserole, sliced yellow squash is steamed with sautéed onions and garlic until tender. The cooked vegetables are combined with beaten eggs, milk, melted butter, and a generous amount of cheddar cheese, which enriches the mixture with a creamy, cheesy texture. Salt and black pepper season the base.

A topping made from crushed Ritz crackers mixed with cheese is reserved and spread atop the casserole, finished with dabs of butter for browning. Baking at 400 degrees Fahrenheit results in a warm casserole with a tender vegetable filling and a slightly browned cracker topping that adds a contrasting crunch.

This dish is served warm and functions well as a side dish or a comforting vegetable main component. The layers of moist squash and the buttery, cheesy crust offer a balance of textures.
