Description
Schug combines 2-3 fresh jalapeno peppers with diced cilantro, whole garlic cloves, cumin, cardamom, salt, and black pepper. These ingredients are processed in a food processor to create a uniform mash. Olive oil is added generously to ensure the sauce is covered and has a smooth texture. The blend features the heat of jalapenos balanced by fresh herbs and warm spices for complexity.
The sauce is stored refrigerated in a sealed jar where it can keep for several months. It can also be frozen in containers or ice cube trays for convenient portioning and longer storage. Schug is versatile, adding heat and flavor to various dishes including grilled meats, sandwiches, and dips.
Ingredients
- 2-3 jalapeno pepper
- ⅓ cup cilantro diced

- pinch cardamom
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup olive oil or more for covering
Instructions
- Put all the schug ingredients in a food processor with a steel blade and process to a smooth mash. Top with olive oil as needed to ensure it is properly covered. Store in a jar in the refrigerator.
- Schug will keep in a sealed jar in the refrigerator for a few months. You can also freeze it in a plastic container, or in ice cube trays.
