  • 3 banana ripe
  • 1 cup light brown sugar packed
  • ½ cup butter 1 stick), cooled slightly, melted
  • ½ cup Greek yogurt
  • 2 egg at room temperature, large
  • 1 tablespoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt

Instructions

  1. Preheat the oven to 350˚F and line a 9 by 5-inch loaf pan with parchment paper, leaving excess on the two longer sides so you can easily remove the banana bread once baked. Spray with nonstick spray and set aside.
  2. Mash the bananas in a large bowl, then add brown sugar and melted butter and continue to mash with the bananas until almost completely smooth.
  3. Add Greek yogurt, eggs and vanilla and whisk until smooth. Add flour, baking soda, cinnamon and salt, and fold with a rubber spatula until no streaks of flour remain.
  4. Scrape the batter into the prepared pan and bake for 55 to 60 minutes, or until a cake tester inserted in the center of the loaf comes out clean.
  5. Let cool for at least 20 minutes, then remove from pan and cool completely on a wire rack before slicing and serving.
