  • 1 beet or 2 small beets, average size
  • 15 ounce chickpeas drained and rinsed, canned
  • ¼ cup tahini paste
  • 1 small garlic peeled, clove
  • 1 lemon zested and juiced
  • 1 teaspoon cumin ground
  • 1 teaspoon salt
  • 1/8 teaspoon cayenne pepper
  • parsley scallions, and extra lemon zest, optional garnish, chopped

Instructions

  1. Preheat the oven to 450 degrees F. Place the beet(s) on a rimmed baking sheet and bake until fork-tender, approximately 60 minutes. Once cool enough to handle, peel the skin off the beet and cut it in half.
  2. Set out a large food processor. Add the beets, chickpeas, tahini paste, garlic, lemon zest and juice, cumin, salt, and cayenne. Lock the lid into place and puree until smooth. If needed, scrape the bowl with a rubber spatula and puree again.
  3. Scoop the hummus into a serving bowl and serve with fresh vegetables, veggie chips, or pita chips.

Notes

  • Store roasted beet hummus in an airtight container in the refrigerator and consume within one week for optimal freshness.
