Zucchini and Corn Frittata

This Zucchini and Corn Frittata combines sautéed onions, zucchini slices, and sweet corn with beaten eggs baked until lightly browned on top. The frittata has a tender, slightly caramelized texture from cooking first on the stove and finishing in the oven. It’s a simple, vegetable-packed egg dish that works as a warm meal or snack.

Description

The Zucchini and Corn Frittata involves briefly caramelizing onion slices in oil, then cooking zucchini and sweet corn together before adding beaten eggs seasoned with salt. The eggs begin cooking on the stovetop until edges start browning lightly, then the skillet is transferred to a hot oven to finish cooking and brown the top slightly under the broiler. This results in a set, fluffy frittata with softened vegetables throughout.

The mixture of sweet corn and tender zucchini provides subtle natural sweetness and mild earthiness balanced by the savory egg base. The caramelized onions add depth and gentle sweetness to the flavor profile. The cooking process yields a lightly crisp edge and a moist interior.

Once baked and broiled, the frittata is sliced into wedges for serving. It can be enjoyed warm and makes a good option for breakfast, brunch, or light dinner.
