Zucchini and Corn Fritters
Description
Zucchini and Corn Fritters use fresh zucchini that is shredded and drained of excess moisture to avoid sogginess. Mixed with corn, onion, flour, eggs, herbs such as dill and parsley, garlic powder, cumin, salt, and pepper, the batter forms into patties and is pan-fried until golden on both sides.
The frying process creates a crisp surface while keeping the fritters tender inside. The herbs and spices add fragrant and earthy elements complementing the natural sweetness of the corn and mild flavor of zucchini. The egg and flour bind the mixture to allow easy frying without falling apart.
These fritters are ideally served hot, either plain or alongside dips or salads. Their balance of texture and seasoning makes them a good match for summer meals when zucchini and corn are in season.
Ingredients
- 2 zucchini courgette, medium
- 1 yellow onion
- ⅔ cup corn
- 4 tablespoons all-purpose flour
- 1 egg lightly beaten
- 2 tablespoons herbs I used dill and parsley, chopped
- ½ teaspoon garlic powder
- ⅓ teaspoon cumin ground
- ⅓ teaspoon salt
- ⅓ teaspoon black pepper
- 3 tablespoons neutral cooking oil for frying, generic cooking oil
Instructions
- Wash and shred/grate the unpeeled zucchini. Place the shredded zucchini onto a clean tea towel and lightly squeeze it over the sink to get rid of any excess moisture. Place the zucchini into a large bowl.
- Either shred the peeled onion or chop it very finely in a mini food processor, then add it to the bowl.
- Add the corn, flour, lightly beaten egg, herbs, spices, salt, and pepper to the bowl. Mix it all together thoroughly.
- Heat the oil in a skillet/frying pan over a medium heat. Spoon the mixture into the pan and spread it into rounds. Fry for 3-4 minutes, then flip them over gently and fry for a further 3-4 minutes on the other side, or until golden and cooked through.
- Place the cooked zucchini and corn fritters onto a plate lined with paper towels to absorb any excess oil.
- Serve and enjoy!
