Zucchini Bake (Savory Casserole)

This savory zucchini bake uses grated zucchini and carrots combined with diced onion, mozzarella cheese, flour, baking powder, eggs, and olive oil to create a moist, cheesy casserole. The mixture is baked until set, yielding a soft and tender texture. The dish balances vegetable freshness with savory, cheesy richness and a mild saltiness.

Description

The Zucchini Bake assembles shredded zucchini and carrots with diced onion, grated mozzarella cheese, and a batter made from flour, baking powder, whisked eggs, and olive oil. Once combined and seasoned with salt, the mixture is poured into an oiled baking pan and baked at 350°F for an hour. This slow baking allows the vegetables and eggs to set into a cohesive yet tender casserole.

Grating the vegetables finely distributes moisture and texture throughout the dish, while the mozzarella adds a creamy, melty component that enriches the flavor and contributes to the savory profile. The baking powder provides slight lift for a lighter texture. The finished bake slices cleanly and can be served as a side dish or light main course.

This casserole highlights simple ingredients in a wholesome format, combining vegetables and dairy in a baked dish with mild seasoning. It can be enjoyed warm or at room temperature.
