  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 2 large egg
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 teaspoons vanilla extract
  • 1 1/2 cups zucchini grated

Instructions

  1. Preheat oven to 325 degrees and spray the 9x5 loaf pan with baking spray or butter and flour it well.
  2. Sift flour, salt, baking soda, baking powder and cinnamon together.
  3. Whisk together the eggs, oil, vanilla and sugar, then add in the dry ingredients.
  4. Add in the zucchini and mix well.
  5. Bake for 45-50 minutes, until it springs back when touched then let cool for 15 minutes before removing from loaf pan.
