Zucchini Bread

Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp allspice
  • ½ cup vegetable oil or coconut oil
  • ½ cup brown sugar packed
  • ½ cup granulated sugar
  • 2 egg large
  • ¼ cup applesauce unsweetened
  • 1 tsp vanilla extract
  • 1 ½ cups zucchini shredded
  • chocolate chips nuts, and raisins, optional

Instructions

  1. Preheat the oven to 350 degrees F. Grease a 9 x 5 inch loaf pan and set aside. 
  2. Combine the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and allspice in a medium bowl. 
  3. In a large mixing bowl combine the oil, sugars, eggs, applesauce, and vanilla. Add the zucchini and mix. 
  4. Combine the dry ingredients into the wet mixture. Stir in any add-ins you choose such as chocolate chips, nuts, and raisins. Batter will be slightly thick. 
  5. Spread the batter in the greased pan and bake for about 55 minutes or until a toothpick inserted in the center comes out clean. You may need to cover the loaf with tin foil during baking to prevent it getting too brown. Let cool before turning out of the loaf pan.
