Description
The recipe begins by cooking zucchini with onion powder in butter until tender yet retaining some firmness. After cooling, the zucchini is combined with shredded cheeses, eggs, salt, and pepper to create a creamy, flavorful filling. This mixture is spread in a greased baking dish.
Crushed Rice Chex cereal coated with melted butter is sprinkled evenly over the casserole to provide a crunchy contrast to the soft interior after baking. The casserole is baked at 350°F uncovered for about 25–30 minutes until the topping is golden and the filling set.
After baking, the casserole is rested to firm slightly before serving. This dish pairs well as a side for poultry or pork or can be enjoyed on its own for a vegetable-rich meal.
Ingredients
- 4 tbsp butter divided
- 6 small zucchini about 7 cups
- 2 tsp onion powder
- 2 cups rice chex cereal crushed
- 1-1 1/2 cups colby cheese shredded
- 1-1 1/2 cups Monterey jack cheese shredded
- 2 large egg lightly beaten
- 1 tsp salt
- 1/4 tsp black pepper
Instructions
- In a large skillet over medium high heat, melt 2 TB butter. Add zucchini and onion powder and cook for 10-12 minutes, stir occasionally. Zucchini should be crisp and tender. Let slightly cool in a bowl.
- Melt remaining 2 TB butter in a microwave safe bowl. Drizzle butter over crushed cereal, tossing to coat.
- Mix together your cheese, eggs, salt and pepper into the zucchini mixture and place in a greased 8-in square baking dish. Sprinkle with cereal mixture.
- Bake at 350, uncovered, for 25-30 minutes. Cool for 10 minutes before serving.
