Ingredients

  • cooking spray
  • 2 zucchini medium
  • 1 cup all-purpose flour
  • 1 egg large
  • 1 cup panko breadcrumbs
  • 1/2 cup Parmesan Cheese grated
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 425°F. Line a baking sheet with parchment paper and lightly grease it with cooking spray.
  2. Cut the zucchini into sticks approximately 3 inches long and 1/2 inch thick. Pat them dry with paper towels to remove excess moisture.
  3. Add the flour to a shallow bowl. In another shallow bowl, beat the egg. In a third shallow bowl, mix the panko breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
  4. Individually dip the zucchini sticks in the flour, then the egg, and then the breadcrumb mixture. Arrange them on the prepared baking sheet in a single layer.
  5. Bake for 20-25 minutes, turning them halfway through, until golden and crispy. Serve hot.
