  • 4 zucchini medium
  • 12 egg large
  • 1/3 cup milk
  • salt
  • black pepper
  • 1 cup cheddar cheese shredded sharp

Instructions

  1. Preheat oven to 350 F.
  2. Shred zucchini, and place in a colander.
  3. Sprinkle with salt, and let zucchini sit for about 15 minutes.
  4. Squeeze all of the moisture you can out of the zucchini.
  5. Heat a large skillet (I use a 10.5 inch, 3.5 quart skillet) over medium-low heat.
  6. Place zucchini in skillet, and let cook for about 1 minute.
  7. In a large mixing bowl, whisk together eggs and milk until well-combined.
  8. Pour egg mixture over zucchini, and season with salt and pepper.
  9. Sprinkle cheese over the top.
  10. Place in oven, and bake for about 20-25 minutes.

Notes

  • Any milk can be used, including plant-based, to make the frittata dairy-free if desired.
  • Sharp cheddar is preferred, but other cheese varieties can be substituted according to taste.
