Zucchini Fritters

Zucchini Fritters combine grated zucchini with finely grated onion, egg, flour, baking powder, and Parmesan cheese to create small patties fried until golden brown. Melted butter and olive oil help achieve a crispy exterior while keeping the center tender. Herbs like dill can be added for freshness, and the fritters are served warm with optional toppings such as sour cream and green onions. This preparation highlights the moist zucchini balanced with savory cheese and light seasoning.

Description

The Zucchini Fritters recipe starts with squeezing excess water from grated zucchini to avoid sogginess. The grated onion adds subtle sweetness and moisture, while egg and flour help bind the batter along with a small amount of baking powder for a light lift. Parmesan cheese and fresh dill introduce savory depth and aromatic notes.

Portions of the batter are pan-fried in a mix of butter and olive oil over medium heat to develop a brown, crisp surface, flipping to finish cooking both sides. The fritters remain thin and tender inside with a slightly crunchy exterior. Seasoning with salt and black pepper is adjusted to taste.

They can be served straight from the pan with sour cream and sliced green onions for fresh contrast. The recipe encourages immediate serving to enjoy the crisp texture. The optional herbs allow variation in flavor without changing the basic technique.

Ingredients

Servings
  • 1 medium zucchini grated
  • 3 tablespoons onion finely grated
  • 1 egg beaten
  • 3 tablespoons all-purpose flour
  • 1/8 teaspoon baking powder
  • 1/8 teaspoon salt or more to taste
  • black pepper to taste
  • 2 tablespoons olive oil or frying oil of choice
  • 2 tablespoons butter for frying
  • 1/4 cup Parmesan Cheese grated
  • 1 tablespoon dill or other fresh herbs, optional, fresh

desired toppings-

  • sour cream optional
  • green onion optional

Instructions

  1. Grate zucchini into a large bowl (I use a medium grater). Place shredded zucchini into a clean tea towel or paper towels and squeeze excess water out. You should then have about one cup of zucchini.
  2. Place zucchini into a large bowl. Stir in onion, egg, flour, baking powder, salt, parmesan cheese, and any herbs until combined.
  3. Over medium to medium high heat, melt 1 tablespoon of olive and and 1 tablespoon of butter in large skillet.
  4. Drop batter by the tablespoonful into hot pan, flattening out to be 3-4 inches in diameter, 1/4-1/8 inch thick.
  5. Cook for 1 minute or so until the bottoms are deep brown and then flip. Gently press. Cook for 30 more seconds, remove to a plate, and season with more salt.
  6. Melt more oil and butter into the hot pan and repeat until no more batter remains.
  7. Serve fritters warm with desired toppings.
