  • 4 cups zucchini shredded
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon kosher salt divided use
  • 1/4 teaspoon black pepper
  • 2 egg
  • 3/4 teaspoon garlic minced
  • 1/4 cup green onions thinly sliced
  • 1/4 cup vegetable oil
  • sour cream optional, toppings, sliced and crumbled as described
  • green onion
  • Bacon

Instructions

  1. Place the shredded zucchini in a large colander and sprinkle 1/2 teaspoon of salt over it. Let it sit for 15 minutes.
  2. Squeeze all of the excess water out of the zucchini, then pat it dry with a paper towel.
  3. Place the zucchini in a large bowl and add the flour, baking powder, remaining 1/2 teaspoon of salt, pepper, eggs, garlic and green onions. Stir until a batter forms.
  4. Heat the vegetable oil in a large deep pan over medium high heat. Place 2 tablespoon size mounds of the fritter mixture in the pan, then flatten them.
  5. Cook the fritters for 3-4 minutes per side, or until they're golden brown and crispy. Repeat the process with any remaining batter.
  6. Add toppings if desired, then serve immediately.
