Zucchini Fritters Recipe
Description
This recipe starts by salting grated zucchini to draw out moisture, then squeezing it dry to prevent soggy fritters. The zucchini is mixed with Parmesan cheese, flour, seasonings, and a beaten egg to create a batter that holds together during frying. Cooking spoonfuls in hot oil, pressed lightly to flatten, yields fritters with a crisp exterior and tender inside.
Cooking times of 3-4 minutes per side and a medium heat ensure even browning without burning. Serving the fritters warm with sour cream adds a creamy cooling contrast to the savory flavors.
To store leftover fritters, cool them completely before refrigerating in an airtight container for up to five days, or freeze them for up to three months. Reheating is best done in the oven or a pan to retain crispness, avoiding the microwave which can make them soggy.
Ingredients
- 2 zucchini grated, medium
- 1 teaspoon salt
- ¼ cup flour
- ¼ cup Parmesan Cheese grated
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- 1 egg lightly beaten, large
- 2 tablespoons canola oil
Instructions
- Place the zucchini in a colander in the sink and sprinkle with the salt. Let sit 5-10 minutes to drain. Wrap the zucchini in a kitchen towel and squeeze it to remove the excess water.
- Add the zucchini to a medium bowl, then add the flour, parmesan, garlic powder, pepper, and egg. Mix until combined.
- Heat the oil in a large skillet over medium heat.
- Drop the zucchini mixture into the hot oil by spoonfuls, flattening slightly with the back of the spoon. Cook 3-4 minutes, then flip and cook an additional 2-3 minutes, or until golden brown on both sides.
- Serve warm with sour cream.
Notes
- Drain and squeeze the zucchini well to remove excess moisture for crispier fritters.
- Store cooled fritters in an airtight container in the refrigerator up to 5 days or freeze for up to 3 months.
- Reheat in oven at 350°F or in a frying pan to maintain crispness; microwaving may soften the crust.
