Zucchini Herb Sausage Breakfast Casserole

The Zucchini Herb Sausage Breakfast Casserole features browned turkey sausage combined with fresh zucchini, garlic, oregano, basil, chives, and baby spinach, all baked within a mixture of beaten eggs and melted Colby Jack cheese. The casserole offers a savory, herbaceous morning dish with a moist, custard-like egg base and tender vegetable pieces, delivering a filling, nutrient-rich start to the day.

Description

This breakfast casserole begins by browning turkey breakfast sausage and sautéing it with garlic and a medley of fresh herbs including oregano, basil, and chives, alongside chopped zucchini and spinach until the greens wilt. The flavorful meat and vegetable mixture is then layered in a casserole dish. Beaten eggs are mixed well and poured over the filling, allowing the eggs to bind the ingredients together during baking.

Shredded Colby Jack cheese is sprinkled on top, melting into a mild, creamy topping with slightly gooey texture. Baking until the center is set ensures a hearty yet tender dish with the freshness of herbs complementing the savory sausage and vegetables. The casserole rests before slicing to maintain shape and development of flavors.

This casserole suits breakfast or brunch served warm, potentially with bread or fresh fruit to complement its richness and herb profile. The use of fresh herbs and vegetables adds brightness and texture to balance the mild cheese and seasoned sausage.

Alternative ingredient options include reducing the number of eggs to 12 and adding half & half or cream to maintain moisture and softness, adapting richness to taste. Cooking times may be adjusted according to oven variations and desired firmness.

Ingredients

Servings
  • 2 Tbsp avocado oil
  • 1 lb turkey breakfast sausage
  • 5 cloves garlic minced
  • 2 medium-sized zucchini chopped
  • 1/4 cup oregano chopped, fresh
  • 1/4 cup basil chopped, fresh
  • 1/4 cup chives chopped
  • 5 ounces baby spinach
  • 1 tsp salt sea salt
  • 18 large egg well beaten
  • 1 1/2 cups Colby jack cheese or mozzarella cheese, grated

Instructions

  1. Preheat the oven to 375 degrees F and lightly oil a large casserole dish.
  2. Heat the avocado oil over medium heat in a large skillet (I use cast iron). Add the turkey breakfast sausage and brown until cooked through.
  3. Add the garlic, zucchini, oregano, basil, chives, baby spinach, and sea salt. Cover and cook until spinach has wilted, about 3 minutes.
  4. Transfer the sausage and vegetable mixture to the casserole dish and spread it into an even layer.
  5. Beat the eggs well in a mixing bowl with a hand mixer, or in a bowl with a fork until well-combined. Pour the beaten eggs evenly into the casserole dish. Sprinkle with mozarella cheese.
  6. Bake on the center rack of the preheated oven 45 - 55 minutes, or until casserole is cooked through. Remove from oven and allow casserole to rest 10 minutes before slicing and serving.

Notes

  • To adjust richness, use 12 eggs combined with two-thirds cup half & half or cream instead of 18 eggs alone.
