Zucchini Lasagna Roll Ups are crafted by slicing medium zucchini lengthwise into thin strips, which are salted to draw out moisture and then patted dry. The filling combines browned Italian sausage cooked with onion and garlic, mixed with eggs, fresh basil, ricotta, Parmesan, and mozzarella cheeses, and black pepper to achieve a rich, savory taste.

The zucchini strips are spread with the sausage and cheese mixture and rolled up individually. A layer of marinara sauce is spread in a baking dish before placing all the rolls seam-side down. Additional sauce and mozzarella cheese go on top before baking.   • 5 medium zucchini sliced lengthwise into 30 1/8-inch thick strips, about 3 lbs
  • 1 Tablespoon olive oil
  • ¾ lbs Italian sausage
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • salt
  • black pepper
  • 1 egg
  • ¼ cup basil chopped, fresh leaves
  • 1 cup ricotta cheese
  • ½ cup Parmesan Cheese freshly shredded
  • 1 ½ cups mozzarella cheese divided, shredded
  • 2 cups marinara sauce

Instructions

  1. Line a baking sheet with paper towels. Lay zucchini slices flat in a single layer onto the prepared baking sheet. Sprinkle each side with salt; let stand 15 minutes. Before rolling, dab zucchini with a paper towel to get rid of excess moisture.
  2. Heat olive oil in a skillet over medium-high heat. Add Italian sausage and cook until browned, about 3-5 minutes, making sure to crumble the sausage as it cooks. Add chopped onion and garlic to the skillet and cook for another 1-2 minutes. 
  3. Transfer cooked sausage and onion mixture to a mixing bowl using a slotted spoon to drain excess fat. Add egg, chopped basil, 1 cup ricotta cheese, 1/2 cup Parmesan cheese, and 1 cup shredded Mozzarella cheese to the bowl. Season with freshly ground black pepper. Stir until everything is well combined.
  4. Preheat oven to 400 F. 
  5. Spread 1 cup marinara sauce onto the bottom of a 9-inch oven-proof skillet; set aside.
  6. Spread 1 tablespoon sausage cheese mixture evenly along each zucchini slice. Roll up and place in the prepared skillet; repeat with remaining zucchini slices. Top zucchini roll-ups with remaining 1 cup marinara sauce and sprinkle with remaining 1/2 cup mozzarella on top.
  7. Bake in a preheated oven for about 25 minutes. Serve warm.
