  • salt kosher salt
  • black pepper kosher salt
  • ¼ teaspoon crushed red pepper
  • 4 ounces goat cheese
  • 1 lemon zest freshly grated
  • fresh herbs for serving

Instructions

  1. Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
  2. Place the zucchini on a cutting board and sprinkle it with salt. Let it for 5 minute, then pay it dry with a paper towel. This helps to remove excess moisture.
  3. Place the sheet of puff pastry on the parchment paper. Cover with the mozzarella cheese, leaving the 1 inch border.
