Zucchini, Lemon and Goat Cheese Puff Pastry Pizza
Description
The recipe begins by salting thinly sliced zucchini to draw out moisture, then patting it dry, which helps reduce sogginess when baked. The puff pastry is laid out and topped with shredded mozzarella, leaving a border to allow the pastry to puff and crisp. The zucchini slices are arranged over the cheese, then seasoned with salt, black pepper, garlic powder, and crushed red pepper for a subtle spice. Crumbled goat cheese adds creamy tanginess, while fresh lemon zest brightens the flavor.
Baking at 425°F crisps the puff pastry edges to a golden finish and melds the cheeses with the zucchini. The result is a light, flaky pizza-style tart with fresh and vibrant flavors that contrast the rich cheeses and buttery crust.
Fresh herbs sprinkled on top add an aromatic finish that complements the lemon and goat cheese notes. This dish works well as a starter, light lunch, or snack.
Ingredients
- 1 zucchini very thinly sliced
- 1 puff pastry sheet, thawed
- ½ cup mozzarella cheese freshly grated
- ½ teaspoon garlic powder
- salt kosher salt
- black pepper kosher salt
- ¼ teaspoon crushed red pepper
- 4 ounces goat cheese
- 1 lemon zest freshly grated
- fresh herbs for serving
Instructions
- Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
- Place the zucchini on a cutting board and sprinkle it with salt. Let it for 5 minute, then pay it dry with a paper towel. This helps to remove excess moisture.
- Place the sheet of puff pastry on the parchment paper. Cover with the mozzarella cheese, leaving the 1 inch border. Top with the zucchini and sprinkle with a little more salt, the pepper and the garlic powder. Crumble the goat cheese over the zucchini and sprinkle on crushed red pepper. Sprinkle on the lemon zest.
- Bake for 20 to 25 minutes, or until golden and crisp. Sprinkle with fresh herbs before serving.
