Zucchini Noodles With Pesto And Bacon

Fresh Zucchini Noodles with Pesto and Bacon makes a light summer meal with the bold flavors of bacon and pasta.

Ingredients
- 1 large zucchini
- 4 lices Bacon
- 2 tomato chopped
- 1/3 cup pesto
Instructions
- Slice zucchini using a spiralizer, mandoline, or julienne slicer, and set aside.
- Chop bacon into bite-size pieces. Cook bacon fully, remove from pan. (I prefer to place mine on a paper towel to soak up some grease.)
- In a microwave safe bowl, cook zucchini noodles for 4-5 minutes, or until they become tender (I cook at 1 minute intervals).
- Toss noodles with pesto, bacon and chopped tomatoes. ENJOY!
