Description
Zucchini Pizza Bites start with medium to large zucchini sliced into quarter-inch rounds, providing a tender base. Shredded mozzarella and Parmesan cheeses melt and brown during cooking, creating a creamy and slightly crispy topping. Mini or chopped pepperoni adds a salty, savory bite that complements the veggies and cheese.
These bites bake at high heat then finish under a broiler for a brief time to achieve golden bubbly cheese. The combination results in a mix of soft zucchini with rich, crisp-topped cheese and pepperoni. Fresh basil garnish adds a pop of herbal color and freshness.
It's important not to overcook the zucchini to keep the rounds tender but not mushy. If using moist toppings like mushrooms, pre-cook them to avoid excess moisture affecting the bites.
Ingredients
- 1 pound zucchini medium to large
- ½ cup pizza sauce
- 1 teaspoon oregano dried
- 2 cups mozzarella cheese shredded
- ¼ cup Parmesan Cheese shredded
- ½ cup mini pepperoni or chopped pepperoni
- other pizza toppings as desired, optional
- basil leaves for garnish, optional, fresh, thinly sliced
Instructions
- Preheat the oven to 450°F.
- Slice the zucchini into ¼-inch thick rounds or if the zucchini is small, slice it lengthwise into ¼-inch strips. Place the zucchini on a rimmed baking sheet.
- Top each slice with pizza sauce and a sprinkle of oregano. Add mozzarella, parmesan cheese, and mini pepperoni.
- Bake for 5 minutes. Remove the zucchini from the oven and turn the oven to broil (high).
- Once the broiler is hot, place the zucchini 4-inches from the broiler and cook for an additional 5 minutes, or until the cheese is bubbly and golden brown.
- Remove from the oven and let cool for a minute or two. Garnish with basil and serve.
Notes
- Do not overcook zucchini to maintain a firm texture in the pizza bites.
- Pre-cook moist toppings such as mushrooms before adding to prevent excess moisture.
